Stuffed French Toast - Ooh La La

Sometimes fate smiles bright on you. And on the last Saturday in June, it smiled at the Richland Park Farmer's Market when Honey Child was right next to Bae's Butter's. They are this amazing Nashville-based nut butter company that creates and sells the best, pure, organic nut and seed butters around with no additives! What sets them apart from other nut butters is they stone grind all of their butters. Stone grinding releases the natural oils and distributes them uniformly throughout creating a wonderfully smooth and creamy product with no need for added oils.

I couldn't resist their cashew butter. One taste was all it took to decide that I'd use it in some stuffed french toast. I went back and forth on which jelly to pair with the cashew butter and finally settled on our Peach Honey Jelly. The buttery smooth cashew butter lends itself perfectly to the sweetness of the peaches. And the honey in the jelly sweetens it enough that you don't even need syrup. My sweet tooth was in full force when I made this so I went for it and drizzled it with some maple syrup. 

 Stuffed French Toast

serves 2

Soak:
3 eggs
1/2 cup milk (I used almond milk)
1/2 teaspoon vanilla extract
Combine above 3 ingredients in a shallow bowl. Mix with fork to blend. 
4 slices bread
nut butter
Peach Honey Jelly
Spread cashew butter on half the bread. Spread peach jelly on other half. Place the jelly slices on top of the cashew butter slices.
Put in egg mixture; coating both sides.
In non-stick skillet (I find this works best), melt 1 tsp. butter and fry stuffed french toast approximately 2-4 minutes or until golden brown. Flip and brown other side.
Top with powdered sugar and/or maple syrup. Enjoy!
 

Even if you don't have any cashew butter, you can still make this with peanut butter or almond butter. I absolutely love, love, love peanut butter on french toast or pancakes. You can thank my parents for that one! I've been known to ask for a side of peanut butter if I order them in a restaurant. I've also been known to change my order if they don't have any.
