PB&J Overnight Oats

If you're anything like me, some mornings the last thing I have time for is making something for breakfast that is not only delicious but is also on the healthy side. It's way to easy to go the "just grab" something route.

These PB&J overnight oats will help you kick your day off with a good, healthy breakfast. While they take a little bit of prep work to make, it all gets done the night before so in the morning all you need to do is literally grab and go! If you like your overnight oats warmed, all it takes is a minute or two in the microwave. 

We use our Strawberry Honey Jelly in these oats and mix peanut butter with half of the oat mixture for, what we consider, an added bonus! Our strawberry just goes hand-in-hand with peanut butter. I'm a smooth peanut butter lover but if you are on the chunky side of the peanut butter fence, I think the added crunch of peanuts would also taste fantastic.

PB&J Overnight Oats
3/4 cup oats
3/4 cup almond milk
1 tablespoon chai seeds
2 tablespoons peanut butter
2-3 tablespoons strawberry honey jelly*
fresh strawberries
mix oats, milk, and chai together
divide in half; to one half add peanut butter
add non-peanut butter half to jar
add strawberry honey jelly
top with fresh strawberries
top with peanut butter/oat mixture)
refrigerate overnight
MAKES 2 half pints
*Mix it up! Don't have strawberry honey jelly on hand? No worries, just use whatever fruit flavor you'd like. All are equally yummy with this! (Well, maybe not the Spicy Tomato.)
